笄町豪龍久保の空間を用い、
すし良月さんの若手会を不定期で開催することとなりました。

昨晩は、そのための一夜。

灯りを落とし、
静かに場を整え、
緊張の中で一貫と向き合う時間。

料理は人がつくるもの。
しかし、その人を育てるのは
空間であり、
一皿に宿る緊張感なのだと思います。

若い手が握る一貫に、
真剣に向き合った夜でした。

Using the space of Kougaimachi Goryu Kubo,
we will be hosting a young chefs’ session from Sushi Ryogetsu on an irregular basis.

Last night was a quiet preparation.

The lights were lowered.
The room was set in silence.
Each piece of sushi was faced with concentration and tension.

Cuisine is created by people.
Yet what shapes those people is the space,
and the quiet intensity that lives within a single piece.

It was a night devoted to sincerity and craft.
