2024年6月、南仏の森に囲まれた砂の畑を訪ねた。

シャトーヌフ・デュ・パプといえば大きな円礫。
しかしラヤスは、砂。

熱を溜め込みすぎない土壌。
ゆっくり成熟するグルナッシュ。

「ワインはパズルだ」

単一の区画ではなく、
複数の要素を統合して完成する。

我々の料理も同じである。

出汁、火入れ、塩、余白。
強く主張するのではなく、
整え、統合する。

2022年は力強く、
2023年は若く緊張感があった。

だがどちらも、
時間を前提に設計されたワイン。

派手さよりも本質。
表現よりも完成度。

先日、エマニュエル・レイノー氏の訃報に接した。

あの砂の感触と
「統合」という言葉は、
これからも我々の料理の中に残り続ける。

心より哀悼の意を表します。

In June 2024, we visited the sandy vineyards surrounded by forest.

While Châteauneuf-du-Pape is known for large galets,
Rayas is sand.

Soil that does not retain excessive heat.
Grenache that ripens slowly.

“Wine is a puzzle.”

Not a single parcel,
but the integration of many elements.

Our cuisine follows the same principle.

Dashi, fire, salt, restraint.
Not to assert —
but to integrate.

The 2022 vintage shows strength.
The 2023 carries youthful tension.

Both are wines built for time.

We recently received news of Emmanuel Reynaud’s passing.

The memory of that sandy soil
and the idea of integration
remain with us.
